Congratulations to Head Chef Chris Rhoney who has been nominated as Chef of the Year in this year's TAA NSW Awards for Excellence. The winning chef will be announced on Wednesday, 20 July at an awards ceremony.

'White onion and thyme soup, welsh rarebit.' Perfect for these cold winter days.

'The original 18th-century name of the dish was the jocular "Welsh rabbit", which was later reinterpreted as "rarebit", as the dish contains no rabbit.' Essentially cheese on toast, however, the cheese bechamel is made using beer instead of milk. Pairs beautifully with our white onion and thyme soup.

A few days ago, we prepared a special breakfast for Noemi and Danny on the day of their wedding. As is a familiar story for many, their special day has been postponed for 2+ years, but the happy couple were finally able to say their I-do's over the weekend.

Our Winemaker of the Month for June is @firstcreekwines, and Head Chef Chris Rhoney has developed a special three-course set menu with matching First Creek wines that you can enjoy exclusively during the entire month of June. This set menu will be available alongside our current set menus.

Sample Botanica’s award-winning cuisine - designed specifically for this event - and experience how each dish (5 dishes) pairs with First Creek’s distinctive wines.

Menu (in order of appearance, and subject to change):

1) Mi-cuit Ocean Trout, zucchini and fennel salad, First Creek Verjus dressing
2) Lobster, citrus mayonnaise, housemade milk bun, Siberian Oscietra caviar, creme fraiche, blini
3) Poppy seed baguettes, caramelised onion and thyme butter
4) Pan seared venison loin, celeriac remoulade, hazelnut
5) Wild mushroom and ricotta ravioli, sage buerre noisette, walnut
6) Truffled double cream Brie, French toast, earl grey sultanas, truffle honey
7) Paris Brest, chocolate cream, peanut and caramelised banana
